When in Rome......

We recently had our first holiday in Europe. Rome was our first port of call. We spent a few days in Roma and naturally did the touristy things like St. Peters Square, The Vatican Museums,  and The Colosseum, Here are a few pics I took of busy Rome.  WARNING: Do NOT repeat NOT try to drive in Rome.....they are very polite...but...very crazy drivers. Having said that I did not see one accident.  We used the trains and the hop-on, hop-off buses. The buses were great, we enjoyed sitting back and enjoying the view for the first round, highlighting our map for spots where we wanted a closer look. Round 2 we jumped off at our highlights and investigated further. When finished hopped back on and went to the next highlight. HINT: Buy your tickets directly from the buses, it's a little bit cheaper than the tourist outlets.

Great Storm to Watch - Over Tocumwal N.S.W. Australia - Mini Tornado

A mini Tornado struck Strathmerton on the weekend of October 31/10/15 destroying a couple of houses. Luckily no one was hurt. Just a bit further along the Murray River at Tocumwal the Tornado ended. Roast Pumpkin & Mushroom Risotto. Decided I wanted a risotto for dinner that tasted great and was good for me. Mmmmmm, so that means, oil is out, dairy is out, gluten is out, fat is out, meat is out.  Geez, what's left? Let's check out what's in the refrigerator.......Pumpkin, celery, red capsicum, Portobello mushrooms, red onion, garlic, vegetable stock, white wine, etc mmmmm. Ok, in the pantry I've got risotto rice etc. So, I made up this recipe below. Hope you like it as much as I do.  Sorry about the photo.  I started eating before I remembered to take a photo, it smelled so good. I had already mixed in the baby spinach and rocket although you can't see them in the photo, I think they went to the bottom!  Anyway, I enjoyed it, so even though the photo isn't as pretty as it could be, the proof is in the eating. Give it a go. Ingredients: 450g pumpkin - cut into cubes and roasted with a sprinkle of water and then Mexican seasoning.  Set aside...
