Great Places To Visit - Bright, Victoria, Australia

We had lovely weather for Easter in Bright. The Autumn colours were lovely. We were a little early for the best of them this year, but I still managed to find a few pretty spots. Have a look at lovely Bright, and visit there sometime. We will be going back. Take a day trip or two around the region as it is beautiful as well, we went to Yackandandah and Beechworth, sort of a large circuit starting and ending in Bright. Lovely quiet old country towns, with lots of people about at Easter. A simple beautiful region.
I have a cousin in Tawonga who has a horse stud "Mountain Creek Moresians", which naturally I had to take a few snaps of. If your looking for a great riding, eventing horse, check out what she has sometime. She has 3 lovely stallions of different breeds and an assortment of mares that she breeds from, beautiful babies, which turn into lovely horses.

Great Storm to Watch - Over Tocumwal N.S.W. Australia - Mini Tornado

A mini Tornado struck Strathmerton on the weekend of October 31/10/15 destroying a couple of houses. Luckily no one was hurt. Just a bit further along the Murray River at Tocumwal the Tornado ended. We happened to be home and live near the edge of town, close to the river. We saw the sky turn pink, grey and green. Ominous. Can't remember a stormy grey sky turning pink or especially green before. Made the hair stand up on the back of my neck. Then we heard this roar. Bernie looked at me as we stood on our back verandah watching the clouds flying about and said "What's that noise?" I replied, "Wind. Lots of it. I think we should go inside now." As I said this we saw the sky along the river turn green and pink and the trees begin to whip wildly. We retreated inside for a bit and as the roar died away we ventured back out to the front verandah as torrential rain began to fall. And boy did it rain!!! Roast Pumpkin & Mushroom Risotto. Decided I wanted a risotto for dinner that tasted great and was good for me. Mmmmmm, so that means, oil is out, dairy is out, gluten is out, fat is out, meat is out. Geez, what's left? Let's check out what's in the refrigerator.......Pumpkin, celery, red capsicum, Portobello mushrooms, red onion, garlic, vegetable stock, white wine, etc mmmmm. Ok, in the pantry I've got risotto rice etc. So, I made up this recipe below. Hope you like it as much as I do. Sorry about the photo. I started eating before I remembered to take a photo, it smelled so good. I had already mixed in the baby spinach and rocket although you can't see them in the photo, I think they went to the bottom! Anyway, I enjoyed it, so even though the photo isn't as pretty as it could be, the proof is in the eating. Give it a go. Ingredients: 450g pumpkin - cut into cubes and roasted with a sprinkle of water and then Mexican seasoning. Set aside...
