Baked Marmalade & Maple Ham

This year I'm doing another baked ham. Each year I like to try a different glaze, and this year I'm doing a Baked Marmalade and Maple Ham. You can use brought Breadfast Marmalade, but I like to make my own 3 fruits Marmalade when citrus is in season and use that, as I think it has much better flavour.
Here's my Christmas Ham for this year, 2012.
Prep Time, about 25 minutes.   Cooking Time: about 2hrs, depending on the size of the ham. I'll give you the qty's etc for a 9kg ham, you can work it out from there.

Ingredients:
1 x 9kg whole leg ham
1 cup Breakfast Marmalade (or homemade 3 Fruits Marmalade)
1/3 cup Maple Syrup. (I use the real stuff not the maple flavoured)
1 bottle of whole cloves. (You will probably use about 1/2 the bottle)

1.  Place oven shelf in lowest position, turn oven (gas fan forced) 160C.
Line the base of your oven with foil, helps with the mess.
Get out your largest baking pan to put the ham in.

2.  Remove the rind from the ham. To do this cut rind off at shank, leaving the shank covered with rind. Then slip you knife under the rind at the base of the ham and lift the rind up. Then using your fingers pull/pry the rind off. Score the ham in a diamond pattern, not too deep, then place ham in baking dish.

3.  In a bowl combine the Marmalade and Syrup, brush/spoon liberally over ham. Place a clove in the center of each diamond. Place in oven, cook turning the ham and basting with remaining mixture about every 15 minutes until no mixture is left and ham is golden brown.

Stand about 10 minutes if serving hot, or allow to cool completely on a wire rack. I like to take the cloves out before slicing.
Ham ready to cook

Finished cooked ham.

Merry Christmas Angels.
Merry Christmas, and enjoy your delicious baked ham!

Great Places To Visit: Tocumwal NSW on the Murray River.

Perhaps I'm a little prejudiced, as Tocumwal is my home town, but I've always loved the Murray River Red Gums and watching the river & the bird, animal life here. All year around it delights me. Even the noisy Corella's can't put me off, I love living here. So why would a visitor want to spend time in Toc? Let me list just a small few off its attractions for you: Water sports: Fishing, skiing, swimming, canoeing, and any other water play you might like. Food: We have a number of Pubs, Clubs, Restaurants & Cafes if not in town then in easy driving distant. BIG variety for good old schnitzels, salads & chips to take-a-way favorites, great Coffee & Cakes and Bakery delights to tempt the taste buds!!  If you're an Artist or Photographer then Toc is a plethora of diverse landscapes to draw (pun intended) your attention. I for one have never tired of its beauty.  For the traveler's in their campers or caravans Toc has a selection of options for you to

Great Storm to Watch - Over Tocumwal N.S.W. Australia - Mini Tornado

A mini Tornado struck Strathmerton on the weekend of October 31/10/15 destroying a couple of houses. Luckily no one was hurt. Just a bit further along the Murray River at Tocumwal the Tornado ended. We happened to be home and live near the edge of town, close to the river.  We saw the sky turn pink, grey and green. Ominous. Can't remember a stormy grey sky turning pink or especially green before. Made the hair stand up on the back of my neck. Then we heard this roar.  Bernie looked at me as we stood on our back verandah watching the clouds flying about and said "What's that noise?" I replied, "Wind. Lots of it. I think we should go inside now." As I said this we saw the sky along the river turn green and pink and the trees begin to whip wildly. We retreated inside for a bit and as the roar died away we ventured back out to the front verandah as torrential rain began to fall. And boy did it rain!!! The early afternoon turned dark as the clouds above turned

It's Baby Magpie Season

Yes it's Spring again. I know because the local magpies have 2 babies. I know this because I occasionally throw out scraps on my back lawn to supplement their food rations and they are regular visitors. This week they brought me a present.....2 babies. Must be a good season this year to be raising 2 babies instead of 1. Anyway the magpies here in Melbourne are white backed magpies as apposed to the magpies at Tocumwal in N.S.W. which are black backed magpies. Also the birds here in Melb. are larger than their northern cousins, probably all the McDonalds they eat down here! I enjoy listening to their warbling song and can't help but shake my head at the patience and persistence of the adult birds constantly being "harassed" by the chicks for food. They are noisy little critters when they are hungry and very bossy, often pecking at the adult birds for more food. I've named them....squarker 1 and squarker 2, they never seem to stop. Poor parent birds, these chicks a
