Recipe - Lesley's Savoury Stuffing.- Roast Chicken & Vegetables.

1 Egg
2 rashers bacon - most fat removed - diced.
Salt & Pepper
1 tablespoon each of Fresh Oregano & Rosemary.
2 tablespoons of fresh Parsley. Finely diced. You can use 1 tablespoon of mixed herbs if you don't have fresh herbs.
4 cups (approx) of fresh breadcrumbs. Any bread you like. I used Organic Oat Sourdough this time. Put bread in food processor to finely crumb or tear with hands for rough crumbs.
1/2 red onion diced.
1 heaped teaspoon finely diced garlic.

Method:
In a bowl beat egg, add all other ingredients, mix well. Place in cavity of chicken, press in tightly to fit all in. You can also gently lift the skin on the breast and place about 1/2 the mixture under the skin if you want.

This time I put all the seasoning in the cavity of the chicken and put 2 rashers of bacon (extra) and some coconut oil under the breast skin.

Then roast your chicken at about 180C-200C for about 1 1/2 hrs to 2 hrs depending on the size of your chicken. I cook mine outside as my B-B-Q has a lid and thermostat. Baste regularly to keep moist and so skin will go a lovely golden brown. I also like to use foil containers, they are cheap to buy and save messy wash up as you just throw them away.

This stuffing recipe is great in any kind of meat. eg. Pocket Steak Roast, Lamb Roll Roast, Pork Roll Roast.

Now cut up your selection of veges to roast, place in foil containers and cook with chicken. Don't forget your greens! I used silverbeet this time, finely sliced, steamed and served with lemon juice and freshly ground pepper. Enjoy your roast!

Great Places To Visit: Tocumwal NSW on the Murray River.

Perhaps I'm a little prejudiced, as Tocumwal is my home town, but I've always loved the Murray River Red Gums and watching the river & the bird, animal life here. All year around it delights me. Even the noisy Corella's can't put me off, I love living here. So why would a visitor want to spend time in Toc? Let me list just a small few off its attractions for you: Water sports: Fishing, skiing, swimming, canoeing, and any other water play you might like. Food: We have a number of Pubs, Clubs, Restaurants & Cafes if not in town then in easy driving distant. BIG variety for good old schnitzels, salads & chips to take-a-way favorites, great Coffee & Cakes and Bakery delights to tempt the taste buds!!  If you're an Artist or Photographer then Toc is a plethora of diverse landscapes to draw (pun intended) your attention. I for one have never tired of its beauty.  For the traveler's in their campers or caravans Toc has a selection of options for you to

Great Storm to Watch - Over Tocumwal N.S.W. Australia - Mini Tornado

A mini Tornado struck Strathmerton on the weekend of October 31/10/15 destroying a couple of houses. Luckily no one was hurt. Just a bit further along the Murray River at Tocumwal the Tornado ended. We happened to be home and live near the edge of town, close to the river.  We saw the sky turn pink, grey and green. Ominous. Can't remember a stormy grey sky turning pink or especially green before. Made the hair stand up on the back of my neck. Then we heard this roar.  Bernie looked at me as we stood on our back verandah watching the clouds flying about and said "What's that noise?" I replied, "Wind. Lots of it. I think we should go inside now." As I said this we saw the sky along the river turn green and pink and the trees begin to whip wildly. We retreated inside for a bit and as the roar died away we ventured back out to the front verandah as torrential rain began to fall. And boy did it rain!!! The early afternoon turned dark as the clouds above turned

It's Baby Magpie Season

Yes it's Spring again. I know because the local magpies have 2 babies. I know this because I occasionally throw out scraps on my back lawn to supplement their food rations and they are regular visitors. This week they brought me a present.....2 babies. Must be a good season this year to be raising 2 babies instead of 1. Anyway the magpies here in Melbourne are white backed magpies as apposed to the magpies at Tocumwal in N.S.W. which are black backed magpies. Also the birds here in Melb. are larger than their northern cousins, probably all the McDonalds they eat down here! I enjoy listening to their warbling song and can't help but shake my head at the patience and persistence of the adult birds constantly being "harassed" by the chicks for food. They are noisy little critters when they are hungry and very bossy, often pecking at the adult birds for more food. I've named them....squarker 1 and squarker 2, they never seem to stop. Poor parent birds, these chicks a
